Chafing-dish capacity is useful only when it matches the menu and refill plan. A labeled volume does not tell a buyer how much food should be held, how heavy the pan becomes, or how often staff should replace it.

Run a Realistic Refill Trial
Fit the intended food pan, load a representative non-food test weight when appropriate, and rehearse lifting and replacement with normal gloves and tools. Confirm that the rim remains supported and the lid still closes correctly.
Specify More Than One Number
Record the nominal capacity, pan dimensions and depth, intended working level, matching frame, and planned menu use. Select capacity from service volume and handling limits, then approve the complete pan-and-frame combination rather than relying on the volume label.
