Why Chafing Dish Temperature Needs Independent Checks

A visible flame, steaming water pan, or hot lid does not prove that buffet food meets its required holding temperature. Measure the food itself with a calibrated thermometer.

Measure the Food, Not the Hardware

Define representative points for each pan, including areas likely to cool during service. Measure without relying on the control setting, follow the approved stirring procedure, and avoid letting the probe touch the pan.

Use the Rule That Applies Locally

For U.S. operations, the FDA Food Code lists 57Β°C (135Β°F) or above for hot holding of time/temperature control for safety food, with stated exceptions. Local adopted requirements and the food-safety plan control the actual limit.

Record Checks and Responses

Document the food, pan position, time, value, instrument, and required response. Preheating, refill size, lid opening, and service traffic can change results. Treat the chafer as holding equipment: verify performance during service rather than judging heat-source appearance.
